Things on Toast; Wednesday – Grilled Cheddar Cheese and Caramelised Shallots

This is like French onion soup on toast.  The sweetness of the caramelised shallots with the saltiness of the cheese makes for a seriously gorgeous snack.  It takes some time so if you are planning on having it for a breakfast, either make the shallots the night before or make it on a lazy morning where you don’t have too much planned.  Whatever your schedule, you MUST make this. Ok.

Here’s How:

Based on a solitary sitting:

2 Shallots

A slice of nice crusty bread

A few slices of cheese (up to you on how cheesy you like it!)

A splash of balsamic vinegar and olive oil


Slice your shallots lengthways, place in a tray, toss in olive oil and splash with balsamic vinegar and place in an oven at 150 degrees for 45 minutes.

Lightly toast your bread, put your cheese slices on top, grill so the cheese has melted.  Top with your caramelized shallots and grill for a further few minutes.

Strangely enjoyable with a glass of milk.
